Instructions
  1. Put the rhubarb, sugar, and water in a pan, cover with a lid, and heat gently, shaking occasionally until the water simmers. Cook for about 5 minutes until tender, remove from the heat, and let cool.
  2. Put the cooled rhubarb, yogurt, and milk in a food processor or blender and blend until smooth and frothy. Check for sweetness and add a little more sugar if necessary and whizz again to combine.
  3. Add a few ice cubes to a glass, then pour in the smoothie and serve immediately.
